Mixed Berry Breakfast Parfait

by grace on August 6, 2012

Here’s to making healthy recipes amidst my massive sweat tooth. I’m pretty sure my whole mouth is composed of sweet teeth. But I think it’s time for a healthier change, so I’m trying to eat less sugar. Surely, my blog has suffered, and will suffer the repercussions of relapse, but rest assured they’ll be within reason. I’m also aiming for less processed foods and more natural options. I’m hoping to get to the point where I won’t crave sugar. (One day! well, maybe not.)

So here’s my casual breakfast parfait! Insert frozen mixed berries and low fat yogurt. Put this in  fancy glass and thank me later. You put it in a bowl and it becomes a light pink mess. But you put it in a wine glass and layer it, and you might as well be on a yacht off the coast of Italy. Feel the fancy.

May I add this is a perfect post-workout treat! But today the workout didn’t happen so this is awkward.

Mixed Berry Breakfast Parfait

(for the berry part)

1 cup frozen mixed berries

1/3 cup low fat vanilla yogurt

1 1/2 tbspomegranate juice

1 1/2 cups low fat vanilla yogurt

Blend mixed berries, 1/3 cup of yogurt and juice till a sorbet consistency, layer with yogurt. Add granola or chocolate chips for a little extra somethin’-somethin’!
